I’ve been really busy lately so our meals have needed to be quick to prepare! Burgers are one of my “go to” recipes when I’m short on time. These Pork Burgers also taste pretty special too, so they’ve been on regular rotation! Thankfully the meat patty has almost as many hidden vegetables as pork mince.
Included in the recipe is grated fennel bulb, carrot, apple and onion. Some extra fennel seeds add even more flavour to the pork burgers. Before you’re turned off by all the grating of vegetables let me tell you a secret. It takes just a moment to drop the fruit and vegetable into the food processor or Thermomix.
I will give instructions for both cooking methods but I promise these burger patties can be knocked up in five minutes. Plus, while the food processor or Thermomix is on the bench you can make this easy apple coleslaw.
So you see, even though we’ve been having burgers for dinner, it really isn’t an unhealthy option. Best of all the kids don’t even know they’re eating something that’s good for them. Happily, as far as they’re concerned, a burger is a burger!
If you have very fussy eaters you may need to add the fennel seeds to only half of the burger mince. The seeds give a really lovely fennel flavour to the pork burgers, but one of my kids was a little suspicious of the taste.
- 1 kg Pork Mince
- 200 gm onion
- 200 gm fennel bulb
- 150 gm green apple
- 150 gm carrot
- 1 red chilli
- 6 cloves garlic
- 25 gm fennel seeds
- 50 gm bread crumbs
- 1 egg
- 2 TBS oil
- 4 Brioche Burger Rolls
- 1/4 cabbage
- 1 small red onion
- 1 green apple
- 1 bunch coriander
- Kewpie mayonaise to serve
- Smokey BBQ sauce to serve
- Place the pork mince, breadcrumbs, fennel seeds and egg in a large mixing bowl and reserve.
- Add the quartered onion, garlic and chilli to the TM. Grate 3sec/10speed.
- Remove the onion mixture and add it to the pork mince.
- Add the quartered fennel bulb to the TM. Grate 2sec/10speed.
- Remove the fennel and add it to the pork mince.
- Add the quartered apple to the TM. Grate 2sec/10speed.
- Remove the apple and add it to the pork mince.
- Add the carrot to the TM. Grate 2sec/10speed.
- Remove the carrot and add it to the pork mince.
- Using a spoon or your hands combine the pork mince ingredients.
- Form the mince into burger patties.
- Fry the pattyies on each side in oil until cooked.
- Use a mandolin or a food processor to shred the cabbage and onion into fine strips. Place them in a serving bowl.
- Core the apple and then slice the apple with the mandolin. Once you have the slices cut the slices into match sticks and then add to the coleslaw.
- Roughly chop the coriander and add it to the coleslaw.
- Dress the salad with mayonnaise to coat.
- Assembly the burger and add BBQ sauce to serve.
When I make the mince I find I have enough mixture leftover to freeze a batch of pre-made burger patties. You’ve got to love recipes that help you out with a second meal.
